Wheat Berry Salad
Wheat berries are whole kernels of wheat. Look for them in the cereal, bulk foods or natural-foods section of your supermarket. This salad is chewy (from the wheat berries), crunchy and delicious

Ingredients
- uncooked wheat berries - ¾ cup
- water - 3 cups
- CREAMY VINAIGRETTE DRESSING
- vegetable oil - ⅓ cup
- mayonnaise or salad dressing - 2 tablespoons
- red wine vinegar - 2 tablespoons
- salt - ½ teaspoon
- garlic powder - ¼ teaspoon
- pepper - ⅛ teaspoon
- SALAD
- fresh broccoli florets - 1 cup
- fresh cauliflower florets - 1 cup
- cherry tomatoes, cut in half - 1 cup
- small green bell pepper, chopped (½ cup) - 1
- medium green onions, sliced (¼ cup) - 4
- crumbled feta cheese (2 oz - ½ cup
Instructions
- In 3-quart saucepan, soak wheat berries in water 30 minutes. Heat to boiling over high heat. Reduce heat to low. Partially cover; simmer 55 to 60 minutes or until wheat berries are tender. Drain and rinse with cold water.
- In small bowl, stir all dressing ingredients until well mixed. In large serving bowl, toss wheat berries, salad ingredients and dressing. Cover; refrigerate at least 1 hour.
