Bulgarian Shopska Salad Recipe

Shopska salad is the most popular Bulgarian appetizer.
This salad comes from the region of the capital of Bulgaria - Sofia, but is prepared in the whole country.
Interesting fact is that the citizens of Sofia are called "Shopi". This is the reason for the name of the Shopska salad.
Shopska Salad is extremely popular among the foreigners that visit the country.
This is because of the fresh and aromatic vegetables, as well the famous white cheese, which it's used for garnish.
Usually the Shopska salad is served as an appetizer or as side dish to grilled or roasted meats. It is prepared from fresh vegetables, and in some areas are added and roasted peppers.
Shopska salad can be prepared very easy and fast as long as you have all necessary ingredients.

- tomatoes - 4 medium size
- cucumber - 1 large
- roasted peppers or fresh green peppers - 2
- chopped parsley - 2 spoonfuls
- chopped or sliced onion - 2 spoonfuls
- Bulgarian cow white cheese - 250g
- vinegar and olive oil - to taste
Cut the tomatoes, cucumbers and peppers to small cubes. Mix well with the parsley, onion, salt, vinegar and oil. Serve in individual plates and top up with the grated cheese.
