Chicken Chow Mein Recipe /lower calorie/

Chow mein is a Chinese term for a dish of stir-fried noodles, of which there are many varieties. Chow Mein is one of the most popular Chinese recipe and it can be made at home with this easy recipe.

Ingredients
- vegetable oil - 1 tablespoon
- boneless skinless chicken thighs - 8 (about 1½ lb) trimmed of excess fat, cut into 1-inch pieces
- carrots, sliced diagonally - 2 medium (1 cup)
- stalks celery, coarsely chopped - 2 medium (1 cup)
- onion, chopped - 1 medium (½cup)
- garlic, finely chopped - 2 cloves
- sliced water chestnuts, drained - 1 can (8 oz)
- chicken broth - 1 cup for homemade broth
- soy sauce - 2 tablespoons
- finely chopped gingerroot - ½ teaspoon
- cornstarch - 2 tablespoons
- cold water - 3 tablespoons
- sliced fresh mushrooms - 1 cup (3oz)
- snow pea pods (4oz) - 1 cup
- Chow mein noodles, - if desired
- skillet, heat oil over - 1 In 10-inch
Instructions
- In 10-inch skillet, heat oil over medium-high heat. Cook chicken in oil about 5 minutes, turning once, until brown.
- Spray 3½- to 6-quart slow cooker with cooking spray. In slow cooker, place carrots, celery, onion, garlic and water chestnuts; top with chicken. In small bowl, mix broth, soy sauce and gingerroot; pour over chicken. Cover; cook on Low heat setting 6 to 8 hours
